Product’s description
Table or grating cheese, named after a plateau in the Alps which is its place of origin. It is a medium fat partially cooked cheese. It is straw-coloured and has a dense, grainy consistency, with irregular
little or medium eyes. It has a mild taste in the medium-aged type, more typical and fragrant in the aged type.
It is made with partially skimmed thermized cow’s milk and naturally ripened for a minimum period of 2 months, 4 months (“Mezzano”) or one year or longer (“Vecchio Oro del Tempo”).
How to enjoy: An excellent table cheese, it is an important part of many regional dishes, the aged variety is highly suitable for grating. It is perfectly accompanied by quality red wines (e.g. Colli Berici
Cabernet, Breganze Pinot nero, Teroldego Rotaliano).
