The Ponthier lemon puree with the Organic Agriculture label, obtained by extracting the juice and expelling the fibres, is distinguished by the high quality of the Sicilian lemon selected. A volcanic land surrounded by mountains, Sicily has a very fertile soil for growing citrus fruit. The island's mountains are mainly composed of tertiary soils, known as "Trubi" or "White Marls", rich in limestone, fine yellow sands and minerals. These draining soils are the ideal base for citrus groves. In addition, the mountains are very rich in small streams that regularly feed the soil. The island's permanent natural exposure to the sun, which is essential for the proper development of citrus fruits, also contributes to the high quality of Sicilian fruits. Sicily has a number of large farms specialising in organic farming, and their size allows them to cope with the yield losses inherent in soft cultivation methods. The lemons are harvested by hand from November to May. The fruit has a fresh, sweet, floral fragrance and a remarkable length in the mouth.
