The sorted and cleaned frozen fruit is cooked in vacuum cooking tanks in a closed system, preserving the color and aroma of the fruit and controlling it with all the necessary tests and measurements, without increasing the HMF (Hydroxymethyl furfural) level. It is transported to the filling units untouched by the piping system. The vacuum is created in the jars by hermetic filling. In this way, Seyidoğlu fig jam preserves its freshness and flavor throughout its shelf life, just as it did on day one.
