Product’s description
Traditional Balsamic Vinegar of Modena PDO is obtained from cooked grape must, matured by slow acetification resulting from natural fermentation and progressive maturation. It matures in small barrels built with different precious woods, especially oak, chestnut and cherry, to infuse it with a great complexity of characteristics and aromas. At the twelfth year of aging it gives rise to the “Traditional”, and at the completion of the 25 year of aging the Traditional Balsamic Vinegar of Modena PDO becomes “Extravecchio”. These two precious condiments are endowed with a dark brown and shiny color, complex, penetrating and persistent aroma, characterized by an evident but pleasant and harmonious acidity. High density.
