Umami is the fifth flavour after sweet, salty, sour and bitter. In Japanese, umami means “savory taste”.

Umami enhances the flavour of a wide variety of foods and has a taste enhancer role. It has a long aftertaste and is tasty. It envelops the palate and the top of the tongue with a veil of softness and roundness.

This flavour is found in ripe tomatoes, parmesan, soy, fish, shellfish, matcha, seaweed, mushrooms, but especially in broths and especially the so-called dashi, one of the basics of Japanese cuisine.

We chose to call our company Umami, because this term is evocative of quality and good taste. We want to democratize this notion of the 5th flavor in European palates. We believe that umami is a healthy and tasty cuisine based on quality, not quantity.

Our products are present on the tables of the greatest chefs, in bistronomic restaurants, and on the internet for individuals.
