Product’s description

Sheep's milk cheese with a smooth rind and a reddish colour due to ageing on lees of natural wine lees.

Compact and crumbly paste, ivory in colour. Sweet and delicate but slightly piquant. The curd rests for 24 hours, then is drained with linen cloths for several days.

At this is salted, placed with the cloth in moulds and matured for a minimum of 8 months.
