HOW TO CONSUME:
In velouté, sprinkled with bacon or slices of smoked salmon.Cooked, integrated into a salad of tomatoes, cucumbers, beetroot and feta.
Mashed, to accompany Toulouse sausages, possibly spiced with garlic and spices such as cumin, turmeric, curry, coriander, or ginger, for a version with Indian flavors (the dahl).
In a salty pie, already cooked in water, incorporated with leek, mushrooms or bacon.
More original, in sweet puree replacing a jam, which can fit into a cake like an almond puff.
