Made by our caseificio Il Parco in San Giovanni Rotondo in the Gargano, with buffalo milk from their own farm.
Ricotta di bufala is a fresh cheese made using the traditional method of boiling the whey left over from processing buffalo milk into mozzarella.
Its fine, creamy texture makes it perfect for a variety of culinary interpretations.
Its taste is mild and delicate: it can be used for savoury and sweet dishes, from starters to desserts.
